ONE-PAN BACON, TOMATO AND BROCCOLI PASTA

Cooking the pasta in this way, all in one pan, means it’s able to absorb all the flavour of the sauce as it cooks.

INGREDIENTS

SERVES:

8 Remarksable Value M&S Select Farms smoked bacon rashers, sliced into 1cm strips

2 cloves Remarksable Value garlic, sliced

2 Remarksable Value peppers, diced

½ tsp chilli flakes

2 tins (400g each) chopped tomatoes

1 litre vegetable stock

500g Remarksable Value penne pasta

1 pack (200g) Tenderstem® broccoli, cut into smaller pieces

Grating parmesan or cheddar, to serve (optional)

METHOD

1: Add a splash of olive oil to a large, deep pan over a medium-high heat. When hot, add the bacon and cook for 5 minutes, or until crispy. Using a slotted spoon, remove the bacon from the pan and set aside on a plate.

2: Add the garlic to the pan and stir for 1 minute. Throw in the diced peppers and cook for 2 more minutes, then add the chilli flakes and cook for a further minute.

3: Stir in the tomatoes and stock, put the lid on the pan and bring to a simmer. Fold in the pasta and leave to simmer for 8 minutes with the lid on, stirring occasionally to stop the pasta from sticking to the bottom of the pan.

4: Add the broccoli and cook for a further 5 minutes, or until the both the broccoli and pasta are tender. Season with salt and pepper.

5: Spoon the pasta into bowls and sprinkle over the crispy bacon. If you like, finish with some grated cheddar or parmesan.
