Cooking veg in a cheesy sauce like this one is a great way to get fussy eaters to eat their broccoli! And don’t waste any of the veg - broccoli and cauliflower stalks are tasty too.
INGREDIENTS
SERVES: 4
1 small broccoli
1 small cauliflower
1 tbsp vegetable oil
1 x 25g sachet of white sauce
1 mug of milk
A small chunk (80g) cheddar cheese
1 heaped tsp mustard powder
1 wheatbiscuit
METHOD
1: Put the oven on at 200C
2: Cut the broccoli and cauliflower into florets and then roughly chop up the stalks and cauliflower leaves. Pop this all into a baking dish, drizzle with the vegetable oil and toss it together. Put the veg in the hot oven and cook for 25 minutes.
3: While the veg is cooking, pour the sachet of white sauce into a pan over a gentle heat and gradually add the milk, stirring for a couple of minutes until smooth. Then take the pan off the heat. Grate the cheese and add half of this to the sauce, along with the mustard powder, mixing it all together so the cheese melts.
4: Take the broccoli and cauliflower out of the oven and pour over the cheese sauce so that it’s evenly covered. Crush the wheat biscuit using your hands and sprinkle this over the top, along with the remaining grated cheese.
5: Return the dish to the oven and cook for a further 20-25 minutes until the top is golden brown, crisp and bubbling.
6: Spoon onto plates and enjoy!
