INGREDIENTS
SERVES: 6-8
6-8 medium parsnips
75g butter
150g runny honey
Oil, for frying
METHOD
1: Peel the parsnips and trim the ends.
2: Bring a pan of salted water up to the boil. Place the parsnips into the water and simmer until they are just cooked.
3: Remove them from the water and leave them to air dry on some kitchen roll for 2-3 minutes.
4: Heat up a large non-stick frying pan on a medium hob and pour in a little oil.
5: Add the parsnips and gently fry until they start to colour.
6: Add the butter and take until it is foaming
7: Add the honey and continue to cook until the honey caramelises and glazes the parsnips.
8: Remove them from the pan. Go careful, they will be hot. Serve.
