APPLE AND CARDAMOM OVERNIGHT OATS

This fruity breakfast oats pot couldn’t be easier – you just soak the oats overnight and then add the apples the next day. The unexpected flavours of honey, apple, vanilla and cardamom turn a very simple recipe into an exciting and uplifting breakfast.

INGREDIENTS

SERVES: 1-2

60g porridge oats

50ml unsweetened apple juice

100ml whole milk

100g Greek yoghurt (0% fat)

¼ tsp ground cinnamon

1 tbsp granulated sweetener

15g raisins

1 tbsp honey

1 apple, peeled, cored and roughly chopped

½ tsp vanilla paste

A big pinch of ground cardamom

2 tbsp water

METHOD

1: Place the porridge oats in a plastic container. Add the apple juice, milk, yoghurt, cinnamon, sweetener and raisins and stir well. Cover with a lid and place in the fridge overnight.

2: The next morning, place a small non-stick frying pan over a medium to high heat. When hot, add the honey, apple, vanilla paste, cardamom and water. Cook for 3–5 minutes, stirring occasionally. Remove from the heat.

3: Take the overnight oats out of the fridge and stir in a little water to loosen the mixture. Pour into a bowl and top with the apple mixture.
